Custard in winter, cream in summer. This recipe is sufficient to be divided into two 8-in round cake tins. So feel free to use this recipe for your next coffee and walnut cake. If I could describe a cake as 'juicy' then this is how I would describe this carrot and walnut cake. The texture is moist and crumbly all at the same time.

It is amazingly easy to make. Just mix all the wet ingredients together and then add them to the dry. Job done! There's no beating of butter and sugar because this carrot cake is made with oil. Place the cream cheese into a mixing bowl and whisk with an electric beater until softened. You could also use a wooden spoon to do this. I love using brown sugars in cake baking. They add a slightly nutty, caramel flavour. If you only have white caster sugar or granulated sugar, that will be fine. Before building the tray, you’ll need to make a table-saw sled and a custom jig to help space out the identical cuts that make the box joints fit snugly together. You’ll also need a template for the handled sides. Once the tray is complete, you’ll want to sand the joints flush and ease the edges along the sides. After that, there are lots of finish options to protect the wood; Tom used mineral oil, but any food-safe wax or oil will work. Many food-safe oil finishes include beeswax, which gives the oil more body, extends the time between applications, and adds a nice floral aroma to the finish.

Alternatively, you could use a ruler to draw a ½-inch grid on a sheet of paper and then draw this template, or one of your own design.
